Caramelize the leeks:
Heat olive oil and 1 tablespoon butter in a skillet over medium heat, add the sliced leeks with salt and pepper, then cook slowly for about 12 to 15 minutes until theyre soft and turning golden brown, stirring now and then so they dont stick.
Prep your bread:
Lay out all four slices and spread softened butter on one side of each piece, this will become the crispy golden exterior.
Build the sandwiches:
Place two slices buttered side down, pile on those gorgeous caramelized leeks, layer the Havarti slices on top, then finish with the remaining bread slices, buttered side facing up.
Grill to perfection:
Cook sandwiches in a clean skillet over medium low heat for about 3 to 4 minutes per side, pressing gently with a spatula, until both sides are golden brown and you can see the cheese starting to ooze out the edges.
Serve and enjoy:
Slice each sandwich in half and serve immediately while the cheese is still gloriously melted and stretchy.
